Freezer breakfast burritos are the weekday morning win. Scramble a big batch, wrap, freeze, and reheat while the coffee brews. Fillings stay flexible: eggs, potato, sausage or beans, cheese.

Pantry-friendly here means swaps are welcome. Amounts are still listed so you can cook without guessing.

Yield: 12 burritos · Time: 45 minutes + freeze

Ingredients

Filling + wrap

  • 12 large flour tortillas (8-10 inch)
  • 12 eggs + ¼ cup milk
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups shredded cheddar
  • 1 can (15 oz) black beans drained OR 2 cups cooked sausage/bacon bits
  • 1 cup salsa (drained slightly)
  • 1 tbsp oil or butter for eggs

Steps

  1. Cook any meat or beans and diced potatoes until done. Scramble the eggs softly (they finish in the reheat). Warm tortillas so they fold without cracking.
  2. Assemble: tortilla, cheese first (it seals), eggs, fillings, a little salsa if it is not too wet. Roll tight, tucking ends.
  3. Wrap each burrito in foil or parchment then foil. Bag and freeze flat.
  4. Reheat from frozen: microwave unwrapped on a plate 1 to 2 minutes, flipping once, or oven at 350°F still wrapped in foil for about 30 minutes until hot.

Use-what-you-have swaps

  • Spinach or leftover potatoes welcome, keep filling not soupy

Serve / store

Keep frozen up to 2 months for best texture. Fridge after thawing and eat within a day.

Wet salsa belongs on the side at reheat time if you hate soggy wraps. Cheese inside still melts either way. Tip from our chaotic kitchen: read the ingredient list once before you start, preheat before you mix wet and dry, and set a timer even when you think you will remember. Taste as you go when the recipe allows it, and write a note on the recipe card if you changed a spice amount so next time is easier.
