Apple crisp from the pantry is weeknight dessert in a nice shirt. Sliced apples, a buttery oat topping, oven does the rest. Serve warm with ice cream if you have it, or straight from the pan with two spoons.
Any baking apple works. Mix soft and firm if that is what the fruit bowl offers. Beautifully Chaotic Life does not need a pastry blender. Fingers cut butter into oats just fine.
Pears can take half the apples. Coconut oil can stand in for butter. The structure stays the same.
Yield: 8 servings · Time: 20 min · 40-45 min bake
Ingredients
Filling
- 6 cups sliced apples (about 2½ lb / 5-6 medium)
- ⅓ cup sugar
- 2 tbsp flour
- 1 tsp cinnamon
- 1 tbsp lemon juice
Topping
- 1 cup oats
- ¾ cup flour
- ½ cup brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup (1 stick) cold butter, cubed
Steps
- Heat the oven to 350°F. Peel and slice the apples. Toss with sugar, cinnamon, lemon juice, and a spoon of flour. Spread in a greased 8×8 or 9×9 dish.
- Mix oats, flour, brown sugar, cinnamon, and salt. Cut in cold butter with a fork or fingers until crumbly. Scatter over the apples.
- Bake 35 to 45 minutes until the topping is golden and the fruit bubbles at the edges. Rest 10 minutes before serving.
Use-what-you-have swaps
- Pears for half the apples
- Coconut oil for butter (slightly less crisp, still good)
- Maple sugar or coconut sugar in the topping
- Gluten-free cup-for-cup flour and certified GF oats if needed
- Add ½ cup chopped pecans to the topping
- 9×13 pan for a thinner crisp; start checking 5 minutes early
Tips from a real kitchen
- Peel if the skins annoy your people. Leave skins on for fiber and less work.
- Cold butter makes better clumps. If butter softens while you mix, chill the topping 10 minutes before baking.
- Fruit should bubble at the edges before you call it done. Pale topping with quiet fruit means wait.
- Rest 10 minutes so juices thicken.
Make-ahead
Mix topping up to 2 days ahead and refrigerate. Slice apples day-of so they do not brown into mush (or toss early slices with lemon and chill). Baked crisp keeps 4 days. Reheat at 325°F. Freeze baked crisp up to 2 months.
Serve and store
Warm is best. Ice cream, whipped cream, or a drizzle of cream. Breakfast leftover heated with yogurt is a personality trait we support.
If it goes sideways
- **Watery crisp:** Apples were very juicy or you skipped the flour in the filling. Add a tablespoon more flour next time.
- **Burnt oats, hard fruit:** Oven too hot or rack too high. Use middle rack and tent foil if topping darkens early.
- **Soggy topping next day:** Normal. Recrisp under a hot oven for 8 minutes.
