These spooky cupcakes start with a real chocolate (or vanilla) batter you can mix in one bowl, then get dressed up with fluffy frosting and whatever candy is left in the treat bowl. No specialty molds. No fondant roses. Just twelve cupcakes that look festive and taste like something you meant to bake, even if you started an hour before the party.

Pantry-friendly here means swaps are welcome. Amounts are still listed so you can cook without guessing.

Yield: 12 cupcakes · Time: 25 min prep · 18-22 min bake

Ingredients

Cupcakes

  • 1½ cups (180 g) flour
  • 1 cup (200 g) sugar
  • ⅓ cup (30 g) cocoa (or +2 tbsp flour for vanilla)
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • ½ cup (120 ml) milk
  • ⅓ cup (80 ml) oil
  • 2 tsp vanilla
  • ½ cup (120 ml) hot coffee or water

Frosting

  • ½ cup (1 stick) soft butter
  • 2 cups (240 g) powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla
  • pinch salt
  • Optional 2 tbsp cocoa

Topping

  • ¾-1 cup chopped leftover candy or sprinkles

Steps

  1. Heat the oven to 350°F. Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk the flour, sugar, cocoa (skip for vanilla and add the extra flour), baking powder, baking soda, and salt until evenly mixed.
  3. In a second bowl or large measuring cup, whisk the eggs, milk, oil, and vanilla. Pour into the dry ingredients and stir until mostly smooth. Stream in the hot coffee or water and stir until the batter looks glossy. A few tiny lumps are fine.
  4. Divide the batter among the liners, filling each about two-thirds full. Bake 18 to 22 minutes, until a toothpick in the center comes out clean or with a few moist crumbs. Cool in the tin 5 minutes, then move to a rack until completely cool.
  5. Beat the soft butter until creamy. Add the powdered sugar, milk, vanilla, salt, and cocoa if using. Beat until fluffy and spreadable. Add a splash more milk if it is too stiff.
  6. Frost the cooled cupcakes. Press chopped leftover candy or sprinkles on top while the frosting is soft so everything sticks.

Use-what-you-have swaps

  • A box mix works for the cupcakes. Still make the frosting (or use one can) and measure the candy toppers so every cupcake gets some.
  • Swap hot coffee for hot water if you want milder chocolate flavor.
  • Jar frosting is fine in a pinch. Whip it 30 seconds with a splash of milk to fluff it up.

Serve / store

Best the day you bake them. Store covered at room temperature up to 1 day, or refrigerate up to 2 days and bring to room temp before serving.

Take a quick photo of the tray before it vanishes. If your house needs peanut-free toppers, lean on Skittles, candy corn, and chocolate chips. Same frosting, same chaos, still a hit.
