Classic cream cheese muffins are soft, lightly sweet, and the kind of bake you pull out when someone says they want bakery muffins without a mixer marathon. A simple batter, a cream cheese swirl or dollop, and a warm kitchen that smells like Saturday morning.

Pantry-friendly here means swaps are welcome. Amounts are still listed so you can cook without guessing.

Yield: 12 muffins · Time: 15 min prep · 18-20 min bake

Ingredients

Muffins

  • 2 cups (240 g) flour
  • ¾ cup (150 g) sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1 cup (240 ml) milk
  • ⅓ cup (80 ml) oil or melted butter
  • 2 tsp vanilla

Filling

  • 4 oz (113 g) cream cheese, soft
  • 3 tbsp (38 g) sugar
  • ½ tsp vanilla
  • Optional: 1 egg yolk

Steps

  1. Heat the oven to 375°F. Line a 12-cup muffin tin or grease well.
  2. Whisk the dry ingredients in a large bowl. In another bowl, whisk the wet ingredients until smooth. Pour wet into dry and stir just until combined. A few lumps are fine.
  3. Beat the cream cheese filling until smooth (softened cream cheese, sugar, egg yolk or splash of milk, vanilla). Fill each cup halfway with batter, add a spoon of filling, then top with more batter. Swirl gently with a toothpick if you like a marbled look.
  4. Bake 16 to 20 minutes, until the tops spring back and a toothpick in the muffin (not only the filling) comes out clean. Cool in the tin 5 minutes, then on a rack.

Use-what-you-have swaps

  • Yogurt thinned with water for milk
  • Light cream cheese OK (softer center)
  • Fold in diced apple or chips

Serve / store

Best warm the first day. Store covered at room temperature 1 day or refrigerate up to 3 days. Rewarm 10 seconds in the microwave.

Freeze extras individually. Future-you will thank present-you on a rushed school morning.
