Low-stress hosting food: a make-ahead cranberry situation and a sheet-pan vegetable side using pantry and produce you can grab without a specialty list.

Two Make-Ahead Thanksgiving Sides From a Normal Pantry

Hosting gets kinder when two sides are done before Thursday morning. These use basic grocery items — not a gourmet checklist.

Side 1: Stovetop cranberry (2 days ahead)

You need: 1 bag cranberries, ¾ cup sugar (or to taste), ½ cup water or orange juice, pinch of salt. Optional: cinnamon stick if it is already in the drawer.

Simmer until berries burst and sauce thickens, 10–15 minutes. Cool, refrigerate in any jar with a lid. Taste cold and adjust sugar. Done.

Side 2: Sheet-pan roasted vegetables (morning of or night before)

You need: whatever sturdy vegetables you have or can grab cheap — carrots, broccoli, onions, sweet potato. Oil, salt, pepper.

Chop similar-sized pieces. Toss with oil and salt on a sheet pan you already own. Roast hot (425°F) until edged and tender, about 25–35 minutes. Reheat on the pan Thursday if you roasted Wednesday.

Protein stays simple

Turkey, spiral ham, or a grocery rotisserie chicken for a tiny gathering all count. The sides above work next to any of them.

Hosting note

Label the fridge shelves: "Thursday — do not eat." Hungry teenagers are the real holiday variable.
