Sheet-Pan Dinner From What You Have (Budget, Few Ingredients)

If it can survive high heat, it can live on one pan. That is the whole method.

The formula

Protein + sturdy vegetables + oil + salt + hot oven (425°F).

Protein options already common in busy houses: chicken thighs or drumsticks, sausages, tofu, chickpeas from a can (drained and dried), salmon fillets if they are in the freezer.

Vegetables: broccoli, carrots, onions, cabbage wedges, sweet potato, bell peppers — use what is in the crisper before it turns.

Steps

  1. Heat the oven. Line a sheet pan if you like easier cleanup (foil you already own).
  2. Cut vegetables so pieces are similar in size.
  3. Toss everything with oil and salt on the pan. Pepper and garlic powder if they exist.
  4. Roast 25–40 minutes depending on the protein, stirring vegetables once.

Doneness without drama

Chicken should not be pink at the bone; use a thermometer if you have one (165°F). Vegetables should be browned at the edges. If vegetables finish first, pull them and let protein catch up.

What you are not doing

You are not making a five-sauce bowl. You are feeding people on a school night with one pan to wash.
