Skillet apple cobbler is cobbler for people who refuse to dirty three bowls. Apples soften in a skillet, a simple biscuit topping goes on top, and you carry the pan to the table. Gaps in the topping are rustic, not a failure.
Any baking apple works. Soft fruit and firm fruit can share the pan. Beautifully Chaotic Life would rather you use the fruit bowl than buy a perfect bag for a photo.
Vanilla ice cream on a hot skillet is not optional in this house. Frozen yogurt counts in a pinch.
Yield: 6 servings · Time: 25 min · 25-30 min bake
Ingredients
Fruit
- 5 cups sliced apples
- ⅓ cup sugar
- 1 tbsp lemon
- 1 tsp cinnamon
- 1 tbsp butter
Biscuit top
- 1 cup flour
- 2 tbsp sugar
- 1½ tsp baking powder
- ¼ tsp salt
- 4 tbsp cold butter
- ⅓ cup milk
Steps
- Heat the oven to 375°F. In an oven-safe skillet, cook butter, sliced apples, sugar, and cinnamon over medium heat until the apples start to soften, 5 to 8 minutes.
- Stir together the topping batter or drop biscuits according to your recipe amounts. Spoon over the apples. Do not worry about full coverage. Gaps are rustic, not wrong.
- Bake 25 to 35 minutes until the topping is golden and cooked through. Cool 10 minutes. Serve from the skillet.
Use-what-you-have swaps
- Baking dish if you have no oven-safe skillet: skip the stove soften, toss raw apples with sugar and cinnamon, top, bake 35 to 40 minutes
- Pears for half the apples
- Frozen sliced apples, thawed and patted dry
- Drop-biscuit topping with a splash more milk if the dough feels stiff
- Add ¼ teaspoon nutmeg or cardamom with the cinnamon
- Dairy-free butter and oat milk in the topping
Tips from a real kitchen
- Taste an apple slice after the skillet soften. Add a spoon of sugar if the fruit is tart, or a squeeze of lemon if it is bland-sweet.
- Do not spread the topping like frosting. Spoonfuls with gaps let steam escape so the biscuit cooks through.
- Rest 10 minutes before serving so the juices thicken instead of flooding the plate.
- Cast iron holds heat. Warn the table. Hot handle, hot pan.
Make-ahead
Mix dry topping ingredients ahead and keep cold. Cut in butter when you are ready to bake. Baked cobbler is best the day you make it. Fridge leftovers up to 3 days; rewarm covered at 325°F so the top does not dry out. Freeze unbaked assembled cobbler tightly wrapped up to a month; bake from frozen and add 10 to 15 minutes.
Serve and store
Serve from the skillet with a big spoon. Ice cream, whipped cream, or plain yogurt for breakfast the next day. Leftovers reheated with a splash of cream in a bowl is a valid morning.
If it goes sideways
- **Soggy topping:** Fruit released too much liquid or topping was underbaked. Bake until deep golden, and do not overload with extra sugar syrup.
- **Dry apples:** Too little butter or sugar in the fruit step, or apples were very firm. Soften longer on the stove next time.
- **Burnt edges, raw center:** Oven ran hot or pan was too full. Tent foil and give it 5 more minutes.
