Sheet-Pan Stuffing With Maximum Crispy Edges

Stuffing is a top Google Thanksgiving search. Bake it on a sheet pan for crunchy edges and a moist middle without stuffing the bird.

Stuffing leads Thanksgiving recipe searches in most U.S. states. Cooking it inside the bird is the old move. Food safety folks prefer stuffing baked separately, and honestly the texture is better when the edges can brown. A sheet pan gives you more surface area than a deep casserole, which means more of the crispy bits people fight over.

What this is not

This is not a dry bread brick. You still use broth and butter. You just spread the mixture thinner so steam escapes and the top toasts.

Serves: 8 to 10
Time: about 55 minutes
Bread note: day-old bread wins

Ingredients

  • 1 pound sturdy bread (sourdough, French, or a mix), cut into 3/4-inch cubes (about 10 cups)
  • 8 tablespoons unsalted butter, divided
  • 1 large onion, diced
  • 3 celery stalks, diced
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon black pepper
  • 2 teaspoons dried sage, or 2 tablespoons chopped fresh
  • 1 teaspoon dried thyme
  • 2 1/2 to 3 cups low-sodium chicken or turkey broth
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • Optional: 1/2 cup toasted pecans or cooked sausage

Steps

  1. Heat oven to 300 F. Spread bread cubes on two sheet pans. Bake 15 to 20 minutes, tossing once, until dry at the edges but not dark. Cool. Raise oven to 375 F.
  2. Melt 6 tablespoons butter in a large skillet. Cook onion and celery with 1 teaspoon salt for 8 to 10 minutes until soft. Stir in pepper, sage, and thyme for 30 seconds.
  3. Whisk eggs with 2 1/2 cups broth in a large bowl. Add toasted bread, onion mixture, parsley, and optional add-ins. Toss. The bread should feel moist, not swimming. Add remaining broth a splash at a time if cubes stay dry in the center.
  4. Grease a rimmed sheet pan with 1 tablespoon butter. Spread stuffing in an even layer about 1 inch thick. Dot with remaining butter.
  5. Bake 25 to 30 minutes until the top is deep golden and the edges crisp. If the center looks pale, broil 1 to 2 minutes while you watch.

Make-ahead plan

Toast the bread up to 3 days early and store airtight. Cook the onion-celery base a day ahead. On Thanksgiving morning, mix with eggs and broth, then bake. You can also fully bake, cool, and reheat at 350 F for 15 minutes. Refresh with a drizzle of broth and a minute under the broiler.

Moisture insurance

  • Cover loosely with foil for the first 15 minutes if your oven runs hot, then uncover to brown.
  • If leftovers dry out, splash with broth before reheating.
  • Do not pack the pan like a brick. Air is the crunch strategy.

The point

People search stuffing because they want the holiday taste without guessing. Sheet-pan baking gives you crispy edges on purpose, keeps the bird safer, and frees the casserole dish for green beans.

Bread choices that matter

Avoid super soft sandwich bread that turns to paste. A bakery loaf a day or two old is ideal. If your bread is fresh, the low oven dry-out step is not optional. Mix white and wheat if that is what you have. Stuffing is forgiveness food.

Sausage or vegetarian lane

Brown 8 ounces of sausage and fold it in with the onion mixture for a heartier pan. For vegetarian tables, use vegetable broth and add toasted pecans plus an extra tablespoon of butter. Both versions still crisp on a sheet pan.

Gravy partnership

Because this stuffing never sat inside the bird, it will not be turkey-juice soaked. That is fine. Spoon gravy on at the table. People who want softer stuffing can portion from the center of the pan where it stays moister.

Scaling

For more than 10 people, use two sheet pans rather than one overcrowded pan. Overcrowding steams the bread and steals your crispy edges. Rotate pans halfway if your oven has hot spots.

Herb swaps

No sage? Use poultry seasoning. Fresh herbs from a window pot are lovely; dried herbs are how most of us actually cook on a school night before a holiday. Double dried amounts only carefully; start with the recipe as written.

Make it the main for a small household

Add browned sausage and serve with a salad if you are not cooking a whole turkey. Sheet-pan stuffing dinner is a legitimate November Tuesday for two adults and a kid.
