- Description: Pears go from rock hard to mush in a day. Rescue them with a buttery oat crumble. Soft fruit is the point, not a problem.

Pear crumble is what soft pears were waiting for. They bake into a jammy base under a crisp topping, and you do not need perfect fruit. Soft is the point.

Pears ripen on their own schedule. One day they are wooden. The next day they bruise if you look at them. Beautifully Chaotic Life would rather bake them than watch them collapse in the bowl.

A handful of cranberries or chopped apple mixed into the pears adds tartness when the fruit is very sweet. Breakfast leftovers cold from the fridge are encouraged.

**Yield:** 6 servings · **Time:** 15 min · 35-40 min bake

## Ingredients

**Fruit**

- 5 cups sliced ripe pears
- 2 tbsp sugar
- 1 tbsp flour
- 1 tbsp lemon
- ½ tsp ginger or cinnamon

**Crumble**

- ¾ cup flour
- ½ cup oats
- ⅓ cup brown sugar
- ¼ tsp salt
- 6 tbsp cold butter

## Steps

1. Heat the oven to 350°F. Slice the pears and toss with sugar, lemon, and a spoon of flour. Spread in a baking dish.
2. Rub butter into flour, oats, sugar, and spice until crumbly. Scatter over the pears.
3. Bake 35 to 40 minutes until golden and bubbling. Rest briefly before scooping.

## Use-what-you-have swaps

- Half pear, half apple
- All apples if the pears are gone
- Ginger, cinnamon, or both in the fruit
- Almond flour for a few tablespoons of the crumble flour for nuttiness
- Coconut oil for butter
- A handful of dried cranberries or chopped crystallized ginger

## Tips from a real kitchen

- Core pears and slice medium-thick. Paper-thin slices dissolve into sauce.
- If pears are very juicy, toss with an extra teaspoon of flour.
- Rub butter into the dry crumble until clumps form when you squeeze. Sandy mix without clumps bakes into dust.
- Bake until you see bubbling at the edges. Pale topping means wait.

## Make-ahead

Assemble the fruit in the dish and keep the crumble in a bag in the fridge up to a day. Top and bake before serving. Baked crumble keeps 4 days chilled. Freeze baked portions up to 2 months; reheat covered.

## Serve and store

Warm with ice cream, or cold with yogurt for breakfast. Pack for a potluck in a dish with a lid. Note major allergens on tape if you are feeding a group (wheat, dairy).

## If it goes sideways

- \*\*Watery bottom:\*\* Pears were extremely ripe. Next time add more flour to the fruit toss, or roast 10 minutes before adding crumble.
- \*\*Topping pale and soft:\*\* Needed more time or a higher rack. Finish under a brief broil only if you watch it.
- \*\*Too sweet:\*\* Use less sugar in the fruit next time and lean on lemon.
