Oatmeal cookie bars exist for the night you want cookie energy and zero patience for a cookie scoop. One bowl, one pan, one tray of squares that cut clean after they cool. That is the whole pitch.

Beautifully Chaotic Life is not here to sell you bakery-perfect edges. We are here for the after-school counter raid, the bake sale that snuck up on you, and the Tuesday when brown sugar and oats are already in the cabinet.

Pantry-friendly means swaps are welcome. Amounts stay listed so you can cook without guessing. If your oats are old-fashioned or quick, both work. If your chips are half a bag of leftovers, that works too.

Read the list once. Preheat before you mix. Set a timer even when you swear you will remember.

**Yield:** 16 bars · **Time:** 15 min · 25-28 min bake

## Ingredients

**Bars**

- 1 cup butter soft
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 2 tsp vanilla
- 1½ cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 3 cups oats
- 1 cup chocolate chips or raisins

## Steps

1. Heat the oven to 350°F. Line a 9×13 pan with parchment.
2. Cream butter and sugars. Beat in eggs and vanilla. Stir in oats, flour, baking soda, cinnamon, and salt. Fold in raisins or chocolate chips.
3. Press evenly into the pan. Bake 22 to 28 minutes until golden at the edges and set in the center. Cool completely before cutting.

## Use-what-you-have swaps

- Half chocolate chips, half raisins (the household peace treaty)
- All raisins if that is what the canister holds
- 1 cup chopped walnuts or pecans for crunch
- Quick oats or old-fashioned oats; avoid steel-cut
- Coconut oil for half the butter if you are short on sticks
- Gluten-free cup-for-cup flour if your house needs it (texture softens a little)

## Tips from a real kitchen

- Soft butter should leave a fingerprint. Rock-hard butter will not cream; melted butter makes greasy bars. Five minutes on the counter usually fixes it.
- Press the dough firmly into the corners. Loose edges dry out first.
- Pull the pan when the center still looks barely soft. Carryover heat finishes the set. Overbaked bars taste like sweet cardboard.
- Cool completely before cutting. Warm bars smear. Cold bars slice into clean lunchbox squares.
- Line with parchment and leave overhang on two sides so you can lift the whole slab out.

## Make-ahead

Bake up to 2 days ahead and keep covered at room temperature. For longer storage, wrap individual bars and freeze up to 2 months. Thaw in a lunchbox; they soften by mid-morning. For a bake sale, cut the night before, store in a single layer with parchment between stacks, and tape an allergen note on the lid (eggs, wheat, dairy, optional nuts).

## Serve and store

Covered at room temperature up to 5 days. Wrap individually for freezers or lunch bags. Pack for parties in a lidded container. Add a tiny sprinkle of flaky salt on warm bars if you like sweet-salty. A cold glass of milk is still correct.

## If it goes sideways

- \*\*Crumbling when you cut:\*\* They needed more cool time, or the bake ran long. Next time shave 2 minutes and chill 20 minutes before slicing.
- \*\*Greasy top:\*\* Butter was too melted going in. Soft, not liquid.
- \*\*Pale and soft in the center after cooling:\*\* Bake 3 to 5 minutes longer next round, or move the pan to the middle rack.
