Freezer breakfast burritos are the weekday morning win. Scramble a big batch, wrap, freeze, reheat while the coffee brews. Fillings stay flexible: eggs, potato, sausage or beans, cheese.

Wet salsa belongs on the side at reheat time if you hate soggy wraps. Cheese inside still melts either way. Beautifully Chaotic Life would rather you freeze twelve imperfect burritos than buy a box of sad freezer sandwiches.

Cool fillings before wrapping when you can. Steam trapped in foil makes ice crystals and mush.

**Yield:** 12 burritos · **Time:** 45 minutes + freeze

## Ingredients

**Filling + wrap**

- 12 large flour tortillas (8-10 inch)
- 12 eggs + ¼ cup milk
- 1 tsp salt
- ½ tsp pepper
- 2 cups shredded cheddar
- 1 can (15 oz) black beans drained OR 2 cups cooked sausage/bacon bits
- 1 cup salsa (drained slightly)
- 1 tbsp oil or butter for eggs

## Steps

1. Cook any meat or beans and diced potatoes until done. Scramble the eggs softly (they finish in the reheat). Warm tortillas so they fold without cracking.
2. Assemble: tortilla, cheese first (it seals), eggs, fillings, a little salsa if it is not too wet. Roll tight, tucking ends.
3. Wrap each burrito in foil or parchment then foil. Bag and freeze flat.
4. Reheat from frozen: microwave unwrapped on a plate 1 to 2 minutes, flipping once, or oven at 350°F still wrapped in foil for about 30 minutes until hot.

## Use-what-you-have swaps

- Spinach, leftover potatoes, or peppers (keep filling not soupy)
- Black beans, pinto beans, crumbled sausage, or bacon bits
- Flour tortillas 8 to 10 inch; corn tortillas crack more when frozen
- Dairy-free shreds if needed
- Hot sauce inside for adults; mild for kids' batch
- Hash browns cooked crisp instead of beans

## Tips from a real kitchen

- Scramble eggs softly. They finish in the reheat. Dry, rubbery eggs taste worse after freezing.
- Warm tortillas so they fold without cracking.
- Cheese first against the tortilla helps seal.
- Roll tight, tuck ends, wrap in parchment then foil, bag flat.
- Label with date and filling. Future-you will not remember.

## Make-ahead

This whole recipe is make-ahead. Freeze up to 2 months for best texture. Fridge after thawing and eat within a day. Reheat from frozen in the microwave 1 to 2 minutes flipping once, or oven at 350°F foil-wrapped about 30 minutes.

## Serve and store

Plate with salsa, avocado, or yogurt. For car mornings, wrap in foil and towel. Eat at a red light only if your life is already that chaotic (no judgment, eyes on the road).

## If it goes sideways

- \*\*Soggy after reheat:\*\* Filling was wet or salsa went inside. Drain salsa, cool fillings, reheat uncovered for the last 30 seconds.
- \*\*Tortilla cracks:\*\* Tortillas were cold. Warm them next batch.
- \*\*Exploding in microwave:\*\* Pierce foil-free burrito with a fork, and do not use metal in the microwave.
